In a few weeks I have an order for a Lemon cake with Vanilla icing due. I'm not big on using icing as a filing between cake layers but it is done often and tastes just fine. I generally prefer using some sort of pie filling or jams.. YUM!!
My idea is to make a Lemon cake and use Vanilla Pudding as a filling. I think it would help the cake stay moist but I don't want the cake to soak up all of the pudding either. Sounds like another experiment is coming on...
